Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter (softened to room temperature)
  • 2 large Eggs
  • 3 tablespoons Lime juice (freshly squeezed)
  • 1 tablespoon Lime zest
  • 0.5 cup Milk
  • 2 tablespoons White rum or tequila (optional; choose based on preference)
  • 2 cups Powdered sugar
  • 8 ounces Cream cheese
  • 0.25 cup Unsalted butter (softened to room temperature, for frosting)
  • 2 tablespoons Lime juice (for frosting)
  • 1 teaspoon Lime zest (for garnish, optional)
  • 1 tablespoon Coarse sugar or salt (optional for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

Step 2

In a medium-sized bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter until creamy, then add the eggs one at a time, beating well after each addition.

Step 4

Mix in the lime juice, lime zest, and optional rum or tequila. The mixture may appear slightly curdled, but this is normal.

Step 5

Add the dry ingredients to the wet ingredients in three additions, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined; do not overmix.

Step 6

Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Step 8

Remove the cupcakes from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

To prepare the frosting, beat the cream cheese and butter together until smooth and creamy.

Step 10

Gradually add the powdered sugar, one cup at a time, beating well after each addition.

Step 11

Mix in the lime juice and continue to beat the frosting until light and fluffy.

Step 12

Once the cupcakes are completely cooled, frost them generously with the lime frosting.

Step 13

If desired, garnish each cupcake with a sprinkle of coarse sugar or salt (to mimic a cocktail rim), lime zest, or a small lime wedge.

Step 14

Serve immediately or store in the refrigerator for up to 3 days. Allow cupcakes to come to room temperature before serving.
