Ingredients

  • 250 g all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 170 g unsalted butter
  • 200 g brown sugar
  • 200 ml golden syrup (or light molasses)
  • 1 tbsp fresh ginger (grated)
  • 2 large eggs
  • 120 ml whole milk

Directions

Step 1

Preheat your oven to 170°C (340°F). Grease and line a 9-inch (23 cm) square baking tin with parchment paper.

Step 2

In a medium bowl, sift together the all-purpose flour, ground ginger, cinnamon, nutmeg, baking soda, and salt. Set aside.

Step 3

In a small saucepan, melt the unsalted butter over medium heat. Once melted, stir in the brown sugar, golden syrup, and grated fresh ginger. Heat gently until the mixture is blended and smooth. Remove from heat and let it cool slightly.

In a large bowl, lightly beat the eggs. Gradually whisk the slightly cooled butter mixture into the eggs, making sure to combine thoroughly.

Add half of the dry ingredients to the wet ingredients and mix gently. Stir in the milk, then add the remaining dry ingredients. Mix until just combined, avoiding overmixing.
