Prep Time:10 mins

Total Time:25 mins
Servings: 4

Ingredients

  • 1 cup Cottage cheese
  • 0.5 cup All-purpose flour
  • 3 large Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Baking powder
  • 1 tablespoon Sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Butter
  • 0 Maple syrup or fruit topping (optional, for serving)

Directions

Step 1

In a large mixing bowl, whisk together the eggs, cottage cheese, milk, sugar, and vanilla extract until well combined.

Step 2

In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix; the batter should remain slightly lumpy.

Step 3

Heat a nonstick skillet or griddle over medium heat. Melt a small amount of butter to lightly grease the surface.

Step 4

Scoop about 1/4 cup of batter for each pancake onto the skillet, leaving enough space for the pancakes to spread slightly.

Step 5

Cook the pancakes for 2-3 minutes on one side, or until bubbles form on the surface and the edges look set. Flip gently with a spatula and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.

Step 6

Repeat with the remaining batter, adding more butter to the skillet as needed.

Step 7

Serve the pancakes warm, topped with maple syrup, fruit, or any topping of your choice.
