Ingredients

  • 2 pounds Ground beef (80% lean)
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 Eggs
  • 1 medium Yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 0.5 cup Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Parsley, chopped (optional)
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

In a large mixing bowl, combine the breadcrumbs and milk. Let them soak for 5 minutes to help keep the meatloaf moist.

Step 3

Add the ground beef, eggs, chopped onion, minced garlic, 1/4 cup of ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, and parsley (optional) to the breadcrumb mixture. Mix gently until just combined, being careful not to overwork the mixture, as this can make the meatloaf dense.

Step 4

Transfer the mixture to the prepared baking sheet or loaf pan. Shape it into a loaf approximately 8 inches long and 4 inches wide if baking on a sheet.

Step 5

In a small bowl, whisk together the remaining 1/4 cup of ketchup, brown sugar, and apple cider vinegar to create the glaze. Spread half of this glaze evenly over the top of the meatloaf.

Step 6

Bake the meatloaf in the preheated oven for 50 minutes. Remove it from the oven, spread the remaining glaze over the top, and return it to the oven.

Step 7

Bake for an additional 10 minutes, or until the internal temperature reads 160°F (71°C) when measured with a meat thermometer.

Step 8

Let the meatloaf rest for 10 minutes before slicing and serving. Resting allows the juices to redistribute, ensuring a moist texture.

Step 9

Serve the meatloaf warm, paired with your favorite sides such as mashed potatoes, green beans, or a fresh salad.
