Ingredients

  • 2 cups black-eyed peas
  • 2 large red bell peppers
  • 2 small habanero peppers
  • 1 large onion
  • 0.5 cups vegetable oil
  • 2 seasoning cubes
  • 1 teaspoon salt
  • 4 cups water
  • 4 boiled eggs

Directions

Step 1

Soak the black-eyed peas in water for at least 30 minutes to soften the skin.

Step 2

Rub the soaked beans between your hands to peel off the skins, then rinse to remove the skins completely.

Step 3

In a blender, combine the peeled beans, red bell peppers, habanero peppers, and onion. Blend until you have a smooth paste. You may need to add a bit of water to achieve a smooth consistency.

Step 4

Pour the blended mixture into a large mixing bowl. Add vegetable oil, seasoning cubes, salt, and the remainder of the water. Stir well to combine all ingredients.

Grease small ramekins or aluminum foil cups with a bit of oil to prevent sticking.

Pour the mixture into the greased cups, filling them halfway. Place half a boiled egg in each cup.
