  • 12 lbs whole turkey
  • 1 cup unsalted butter
  • 2 tbsp olive oil
  • 2 tbsp salt
  • 1 tbsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 large yellow onion
  • 3 stalks celery stalks
  • 6 whole garlic cloves
  • 6 cups chicken broth
  • 6 cups cornbread
  • 4 cups day-old bread cubes
  • 3 large eggs
  • 0.25 cup fresh parsley
  • 1 tbsp poultry seasoning

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Rinse the turkey inside and out, then pat it dry with paper towels.

Step 3

Rub the turkey generously with olive oil, salt, black pepper, thyme, and sage. Place the turkey in a large roasting pan, breast-side up.

Step 4

Stuff the turkey cavity with a rough chop of the onion, 2 celery stalks, and 4 garlic cloves.

Step 5

Place the turkey in the oven and roast for approximately 15 minutes per pound, or until the internal temperature in the thickest part of the thigh reaches 165°F (75°C). Baste the turkey every 30 minutes with pan drippings.

While the turkey is roasting, prepare the dressing. Crumble the cornbread into a large mixing bowl, then add the bread cubes.
