Preheat the oven to 180°C (350°F) and grease six small ramekins with butter. Dust them with a light coating of breadcrumbs to prevent sticking.
Chop the dark chocolate into small pieces and melt it over a double boiler or in the microwave in short intervals. Let it cool slightly.
In a mixing bowl, cream together the butter and granulated sugar until light and fluffy using a handheld or stand mixer.
Separate the eggs into yolks and whites. Add the egg yolks, one at a time, to the butter-sugar mixture, mixing well after each addition.
Stir the melted chocolate into the butter mixture until fully combined.
In another bowl, combine the ground hazelnuts, breadcrumbs, cocoa powder, and baking powder. Gradually fold this dry mixture into the wet ingredients until evenly combined.
In a separate clean bowl, whisk the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chocolate batter in three batches, being careful not to deflate the mixture.
Divide the batter evenly between the prepared ramekins. Place the ramekins in a deep baking dish and pour hot water into the dish to reach halfway up the sides of the ramekins.
Bake the puddings in the preheated oven for 40-45 minutes, or until a skewer inserted into the center comes out moist but not wet.
Remove the ramekins from the water bath and allow them to cool for about 10 minutes. Carefully loosen the edges with a knife and invert the puddings onto serving plates.
Top each pudding with whipped cream and drizzle with chocolate sauce, if desired. Serve warm and enjoy!
