Ingredients

  • 250 g All-purpose flour
  • 150 g Granulated sugar
  • 150 g Unsalted butter, softened
  • 1 large Egg
  • 0.5 tsp Salt
  • 500 ml Milk
  • 200 g Poppy seeds
  • 40 g Cornstarch
  • 1 tsp Vanilla extract
  • 1 tsp Lemon zest

Directions

Step 1

In a large mixing bowl, combine 250g of all-purpose flour, 50g of granulated sugar, and 0.5 tsp of salt.

Step 2

Add 150g of softened unsalted butter and 1 large egg to the dry ingredients. Mix until a dough forms. Wrap the dough in plastic wrap and chill in the refrigerator for 20 minutes.

Step 3

Preheat your oven to 180°C (350°F). Grease a 9-inch (23cm) round springform pan.

Step 4

Roll out the chilled dough on a lightly floured surface to a size that will cover the bottom and sides of the pan. Transfer the dough to the prepared pan and press it evenly into the bottom and up the sides.

Step 5

To prepare the poppy seed filling, combine 500ml of milk, 100g granulated sugar, and 200g poppy seeds in a medium saucepan over medium heat. Stir constantly until the mixture begins to thicken.

Step 6

In a small bowl, dissolve 40g of cornstarch in a little cold water and add this to the poppy seed mixture, stirring continuously. Cook until the mixture thickens considerably, then remove from heat.

Step 7

Stir in 1 tsp of vanilla extract and 1 tsp of lemon zest into the poppy seed filling.

Step 8

Pour the poppy seed filling into the crust-lined pan, spreading it evenly with a spatula.

Step 9

Bake in the preheated oven for 45 minutes, or until the crust is golden and the filling is set.

Step 10

Remove the Mohnkuchen from the oven and allow it to cool in the pan for at least 15 minutes before releasing the springform. Serve warm or at room temperature.
