Ingredients

  • 250 grams Gram flour (besan)
  • 125 grams Ghee (clarified butter)
  • 4 tablespoons Milk
  • 200 grams Sugar
  • 100 ml Water
  • 1 teaspoon Cardamom powder
  • 2 tablespoons Almonds (sliced)
  • 2 tablespoons Pistachios (sliced)
  • 1 tablespoon Edible rose petals (optional)

Directions

Step 1

In a large mixing bowl, combine the gram flour (besan) and 4 tablespoons of melted ghee. Rub the mixture between your palms until it resembles coarse breadcrumbs.

Step 2

Add 4 tablespoons of milk to the mixture and knead lightly. Cover and let it rest for 20 minutes.

Step 3

After resting, sift the mixture through a fine sieve to break up any lumps.

Step 4

In a heavy-bottomed pan, melt the remaining ghee over low heat. Add the sieved gram flour mixture and roast on low heat, stirring continuously for 15-20 minutes, until the mixture turns golden brown and releases a nutty aroma.

In a separate pot, combine sugar and water to prepare the sugar syrup. Heat the mixture on medium flame, stirring occasionally, until it reaches a one-string consistency (when a single thread forms between your fingers when pinched and stretched).

Once the sugar syrup is ready, add it to the roasted gram flour mixture. Mix quickly and thoroughly to combine.

Add cardamom powder and mix well. Cook the mixture on low heat until it thickens and starts to leave the sides of the pan.

Pour the mixture into a greased rectangular tray or plate. Use a spatula to smooth and level the surface evenly.

Sprinkle sliced almonds, pistachios, and edible rose petals (if using) over the top. Gently press them into the mixture.
