Ingredients

  • 500 g Ground lamb
  • 250 g Ground beef
  • 1 large Onion, finely grated
  • 3 Garlic cloves, minced
  • 1 tbsp Ginger, minced
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Turmeric powder
  • 1 tsp Garam masala
  • 0.25 tsp Cayenne pepper (optional)
  • 1 tsp Salt
  • 2 tbsp Fresh cilantro, chopped
  • 50 g Pistachios, finely chopped
  • 50 g Golden raisins, finely chopped
  • 50 g Breadcrumbs
  • 1 Egg, beaten
  • 2 tbsp Ghee or vegetable oil, for greasing
  • 6 Wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

In a large bowl, combine the ground lamb and ground beef. Add the grated onion, garlic, ginger, ground cumin, ground coriander, turmeric powder, garam masala, cayenne pepper (if using), salt, and chopped cilantro. Mix thoroughly with your hands until well combined.

Step 2

In a separate small bowl, prepare the stuffing by mixing the finely chopped pistachios and golden raisins together.

Step 3

Divide the meat mixture into 6 equal portions. Take one portion and flatten it slightly in the palm of your hand.

Step 4

Place about 1 teaspoon of the pistachio-raisin filling in the center of the meat. Carefully wrap the meat mixture around the filling, sealing it completely and forming a long cylindrical kebab shape.

Step 5

Thread the kebab onto a soaked wooden skewer. Repeat with the remaining meat and filling to make a total of 6 stuffed kebabs.

Preheat an outdoor grill, stovetop grill pan, or broiler. Lightly grease the grill grates or pan with ghee or vegetable oil.

Brush the kebabs with a little ghee or oil, then cook them over medium-high heat for about 15-20 minutes, turning occasionally, until they are evenly browned and cooked through.

Remove the kebabs from the grill and let them rest for a couple of minutes before serving.
