Ingredients

  • 2 pounds Turkey bones
  • 12 cups Water
  • 3 medium Carrots
  • 3 Celery stalks
  • 1 large Onion
  • 4 Garlic cloves
  • 2 Bay leaves
  • 1 teaspoon Dried thyme
  • 1 bunch Parsley
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 cup Cooked turkey meat (optional)
  • 1 cup Noodles or rice (optional)

Directions

Step 1

Place the turkey bones in a large stockpot. Add 12 cups of water and bring to a boil over medium-high heat.

Step 2

Once the water reaches a boil, reduce the heat to low and skim off any foam or impurities that rise to the surface.

Step 3

Wash and roughly chop the carrots, celery, and onion. Peel and smash the garlic cloves.

Step 4

Add the chopped vegetables, garlic, bay leaves, dried thyme, parsley, salt, and black pepper to the pot.

Step 5

Cover the pot partially, allowing steam to escape, and simmer for 2-3 hours. Stir occasionally to ensure everything cooks evenly.

Step 6

After cooking, use a slotted spoon to carefully remove the turkey bones and large vegetable pieces from the pot.

Step 7

Strain the broth through a fine mesh sieve or cheesecloth into a clean pot or large bowl, discarding solids.

Step 8

Taste and adjust seasoning with additional salt or black pepper, if desired.

Step 9

If using cooked turkey meat, shred it into bite-sized pieces and add it to the strained broth. Simmer for 10 minutes to heat through.

Step 10

If using noodles or rice, cook them separately according to package instructions and add them to individual bowls before serving.

Step 11

Ladle the hot soup into bowls and garnish with fresh parsley, if desired. Serve warm and enjoy!
