Ingredients

  • 2 cups canned pinto beans (drained and rinsed)
  • 0.5 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 0.5 teaspoons onion powder
  • 0.5 teaspoons ground cumin
  • 0.25 teaspoons chili powder
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 tablespoon cilantro (chopped, optional for garnish)

Directions

Step 1

In a medium saucepan, heat the olive oil over medium heat.

Step 2

Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn it.

Step 3

Stir in the drained and rinsed pinto beans, vegetable broth, onion powder, ground cumin, chili powder, salt, and black pepper.

Step 4

Cook over medium heat for about 5 minutes, occasionally stirring to ensure the beans don’t stick to the pan.

Step 5

Using a potato masher or the back of a wooden spoon, mash the beans until most are smooth but some remain chunky for texture. If the mixture is too thick, add more vegetable broth, 1 tablespoon at a time, until desired consistency is reached.

Step 6

Stir in the lime juice and cook for another 1–2 minutes.

Step 7

Remove from heat and garnish with chopped cilantro if desired.

Step 8

Serve warm as a side dish, taco filling, or dip. Enjoy!
