Ingredients

  • 1 cup Black beans (canned, drained and rinsed)
  • 0.5 cup Breadcrumbs
  • 0.25 cup Corn kernels (cooked or canned, drained)
  • 0.25 cup Red onion (finely chopped)
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Hot sauce
  • 0.5 cup Cheddar cheese (grated)
  • 0.25 cup Milk
  • 1 tablespoon Butter
  • 1 tablespoon All-purpose flour
  • 2 pieces Burger buns (toasted)
  • 0.25 cup Tortilla chips (crushed)
  • 0.25 cup Pickled jalapeños
  • 2 pieces Lettuce leaves
  • 2 tablespoons Vegetable oil

Directions

Step 1

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving a few chunks for texture.

Step 2

Stir in the breadcrumbs, corn kernels, red onion, chili powder, cumin, garlic powder, and hot sauce. Mix well to form a cohesive mixture.

Step 3

Divide the mixture into two equal portions and shape into burger patties. Place them on a plate and refrigerate for 10 minutes to help them firm up.

Step 4

While the patties chill, prepare the cheese sauce. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux.

Step 5

Gradually whisk in the milk, ensuring no lumps form. Cook until the mixture thickens slightly, about 2-3 minutes.

Step 6

Lower the heat and stir in the grated cheddar cheese. Mix until the cheese is fully melted and the sauce is smooth. Keep warm on low heat, stirring occasionally.

Step 7

Heat the vegetable oil in a non-stick pan over medium heat. Cook the chilled patties for 4-5 minutes on each side until golden brown and heated through.

Step 8

Assemble the burgers by placing a lettuce leaf on the bottom half of each toasted bun. Top with a cooked bean patty.

Step 9

Drizzle a generous amount of cheese sauce over the patty, followed by crushed tortilla chips and pickled jalapeños.

Step 10

Finish with the top half of the bun and serve immediately.
