Ingredients

  • 1 lb Cod fillets (fresh or frozen, thawed)
  • 1 Lemon
  • 3 tbsp Olive oil
  • 1 Red onion (thinly sliced)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 cup Kalamata olives (pitted and halved)
  • 2 tbsp Capers (drained)
  • 2 tbsp Fresh parsley (chopped)
  • 1 clove Garlic (minced)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Rinse the cod fillets under cold water and pat them dry with paper towels.

Cut the lemon in half and squeeze the juice from one half over the cod fillets. Reserve the other half for later.

Step 3

Season the cod with a pinch of salt and pepper on both sides.

In a large skillet, heat 1 tablespoon of olive oil over medium heat.
