Ingredients

  • 1 box (8-ounce) Manicotti shells
  • 1 tablespoon Olive oil
  • 15 ounces Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 1 cup Grated Parmesan cheese
  • 1 cup Fresh spinach, finely chopped
  • 1 large Egg
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried Italian seasoning
  • 3 cups Marinara sauce
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the manicotti shells according to the package instructions until al dente. Drain and drizzle with 1 tablespoon of olive oil to prevent sticking. Set aside to cool.

Step 3

In a large mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, 1/2 cup of grated Parmesan, chopped spinach, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix thoroughly until smooth.

Step 4

Using a spoon or a piping bag, carefully fill each manicotti shell with the cheese mixture. Be gentle to avoid tearing the shells.

Step 5

Spread 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish.

Step 6

Arrange the filled manicotti shells in a single layer in the baking dish.

Step 7

Pour the remaining marinara sauce over the shells, ensuring they are fully covered.

Step 8

Sprinkle the remaining 1 cup of shredded mozzarella and 1/2 cup of grated Parmesan evenly over the top.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 10

Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Step 11

Let the manicotti cool for 5 minutes before serving. Garnish with fresh chopped parsley if desired.
