  • 12 pieces Medjool dates (pitted)
  • 0.75 cups Raw almonds
  • 0.5 cups Raw cashews
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoons Vanilla extract
  • 0.25 teaspoons Sea salt
  • 1 tablespoons Water (if needed)

Directions

Step 1

Prepare a food processor with a standard blade attachment.

Step 2

Add the raw almonds and cashews to the food processor. Pulse several times until the nuts are roughly chopped, but not overly ground. Transfer the chopped nuts to a bowl and set aside.

Step 3

Place the pitted Medjool dates in the food processor. Process until the dates break down into a sticky, paste-like consistency.

Step 4

Add the chopped nuts back into the food processor with the date paste. Sprinkle in the cocoa powder, vanilla extract, and sea salt. Pulse together until the mixture begins to clump and sticks together when pressed between your fingers. If the mixture seems too dry, add 1 tablespoon of water and pulse again.

Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. Transfer the mixture to the dish and press it down firmly into an even layer using your hands or the back of a spoon.
