  • 1 cup whole milk
  • 3 cups (about 3 6.5-ounce cans) canned clams with juice
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon thyme leaves
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

In a large Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

Add the butter to the pot with the bacon fat, and melt over medium heat.

Once melted, sauté the diced onion and celery in the butter until soft and translucent, about 5 minutes.
