Ingredients

  • 2 whole red bell peppers
  • 1 whole ripe tomato
  • 4 whole garlic cloves
  • 0.33 cup blanched almonds
  • 1 teaspoon smoked paprika
  • 2 tablespoons red wine vinegar
  • 0.25 cup extra-virgin olive oil
  • 1 piece toasted bread slice
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Place the red bell peppers, tomato, and garlic cloves (unpeeled) onto the baking sheet. Drizzle with 1 tablespoon of olive oil and toss to coat.

Step 3

Roast the vegetables in the oven for 20–25 minutes, turning halfway through, until the peppers are blistered and slightly charred.

Step 4

Remove the tray from the oven and let the vegetables cool slightly. Peel the garlic and remove the skins and seeds from the peppers.

Step 5

In a dry skillet over medium heat, toast the almonds for 3–4 minutes until golden and fragrant. Remove from heat and set aside.

Tear the toasted bread slice into small pieces.

In a food processor, combine the roasted vegetables, toasted almonds, bread pieces, smoked paprika, red wine vinegar, salt, and pepper. Blend until a rough paste forms.

While the food processor is running, slowly drizzle in the remaining olive oil, blending until the sauce is smooth and creamy. Taste and adjust seasoning if needed.
