Ingredients

  • 1.5 cups Whole wheat flour
  • 0.5 cups Rolled oats
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Salt
  • 1 large Egg
  • 0.5 cups Unsweetened applesauce
  • 0.25 cups Maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 cups Plain Greek yogurt
  • 1 medium Grated apple (peeled and cored)
  • 0.25 cups Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Whisk together until evenly mixed.

Step 3

In another mixing bowl, whisk the egg until beaten. Stir in the applesauce, maple syrup, vanilla extract, and Greek yogurt until smooth.

Step 4

Gradually add the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix.

Step 5

Fold in the grated apple and chopped nuts (if using) gently to distribute them evenly throughout the batter.

Step 6

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Enjoy warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
