Ingredients

  • 12 oz tortilla chips
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 0.25 cup water
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup refried beans
  • 1 cup diced tomatoes
  • 0.5 cup sliced black olives
  • 0.25 cup sliced jalapeños
  • 0.5 cup sour cream
  • 0.5 cup guacamole
  • 0.25 cup chopped green onions
  • 2 tbsp fresh cilantro (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a wooden spoon as it cooks.

Step 3

Drain any excess grease from the skillet and stir in the taco seasoning and water. Simmer for 5 minutes until the beef is well coated in seasoning and the liquid has reduced. Set aside.

Step 4

On a large oven-safe tray or sheet pan, spread out half of the tortilla chips in an even layer.

Step 5

Spoon dollops of refried beans over the chips, followed by half of the seasoned ground beef.

Step 6

Sprinkle half of the shredded cheddar and Monterey Jack cheeses evenly over the layer.

Step 7

Add the remaining tortilla chips on top, followed by the rest of the ground beef and cheeses.

Step 8

Bake in the oven for 8–10 minutes, or until the cheese is fully melted and bubbly.

Step 9

Once out of the oven, top the nachos with diced tomatoes, black olives, and sliced jalapeños.

Step 10

Add dollops of sour cream and guacamole for extra creaminess, then sprinkle with chopped green onions and fresh cilantro, if desired.

Step 11

Serve immediately, and enjoy your loaded nachos with friends and family!
