  • 0.25 cup Flaxseed meal
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Sea salt
  • 1 teaspoon Ground cinnamon
  • 1 cup Unsweetened applesauce
  • 0.5 cup Pure maple syrup
  • 0.25 cup Coconut oil (melted)
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1.5 cups Fresh blueberries
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or lightly grease the cups with coconut oil.

Step 2

In a large mixing bowl, whisk together the oat flour, brown rice flour, flaxseed meal, baking soda, sea salt, and cinnamon until well combined.

In a separate medium bowl, whisk together the applesauce, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth and evenly mixed.
