  • 2 medium, finely chopped Tomatoes
  • 2 medium, finely chopped Onions
  • 2 teaspoons Ginger-garlic paste
  • 2 teaspoons Coriander powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon, crushed Kasuri methi (dried fenugreek leaves)
  • 1 teaspoon, or to taste Salt
  • 3 tablespoons Vegetable oil
  • 0.5 cup Water
  • 2 tablespoons, chopped Fresh cilantro

Directions

Step 1

Heat the vegetable oil in a large pan or skillet over medium heat.

Step 2

Add the chopped onions and sauté until golden brown, about 5 minutes.

Step 3

Stir in the ginger-garlic paste and sauté for 1-2 minutes until the raw aroma disappears.

Step 4

Add the chopped tomatoes and cook until they break down and form a thick paste, about 5 minutes.

Stir in the coriander powder, turmeric powder, red chili powder, and salt. Cook the spices for 1-2 minutes until fragrant.

Add the diced carrots, cauliflower florets, and green beans. Stir well to coat the vegetables in the spice mixture.
