Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 pound Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Heavy cream
  • 0.25 cup Milk
  • 4 stalks Scallions (green onions), thinly sliced
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 2 cloves Garlic, minced
  • 1 teaspoon Olive oil

Directions

Step 1

Peel the Yukon Gold and Russet potatoes, then cut them into 1-inch cubes.

Step 2

Place the potato cubes into a large pot and cover with cold water. Add 1 teaspoon of salt to the pot.

Step 3

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes for about 15-20 minutes or until they are fork-tender.
