Ingredients

  • 1 pound ground beef (or a mix of beef and pork)
  • 1 large sweet potato

  • 2 large eggs
  • 1 cup breadcrumbs
  • 0.25 cup milk
  • 1 tablespoon Worcestershire sauce
  • 0.25 cup ketchup
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon olive oil
  • 0.25 cup optional topping: extra ketchup or BBQ sauce

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a standard loaf pan or line it with parchment paper for easy removal.

Step 2

Peel and cube the sweet potato, then boil it in a medium-sized pot of salted water until tender, about 10–12 minutes. Drain and mash the sweet potato until smooth, and let it cool slightly.

In a small skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until softened and aromatic, about 3–4 minutes. Set aside to cool.

In a large mixing bowl, combine the ground meat, mashed sweet potato, sautéed onion and garlic, parsley, thyme, eggs, breadcrumbs, milk, Worcestershire sauce, ketchup, salt, and black pepper.
