Ingredients

  • 300 grams mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 100 grams granulated sugar
  • 2 tablespoons water
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 250 milliliters heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 50 grams fresh berries (for garnish)
  • 1 handful mint leaves (optional, for garnish)

Directions

Step 1

Place the mixed berries, granulated sugar, and 2 tablespoons of water in a medium saucepan. Cook over medium heat for about 8-10 minutes, stirring occasionally, until the berries are softened and release their juices.

Step 2

Remove the saucepan from heat and let the berry mixture cool slightly. Use a blender or food processor to puree the berries until smooth. Strain the puree through a fine-mesh sieve to remove seeds, pressing with a spatula to extract as much liquid as possible. Set aside to cool completely.

Step 3

In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water and let it bloom for about 5 minutes. Once bloomed, microwave the gelatin for 10-15 seconds to dissolve completely. Stir and let cool slightly.

Stir the dissolved gelatin into the cooled berry puree until well combined.
