Ingredients

  • 200 grams green beans
  • 200 grams yellow wax beans
  • 6 pieces bacon slices
  • 50 grams slivered almonds
  • 20 grams unsalted butter
  • 2 pieces garlic cloves
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon lemon zest
  • 1 cup water

Directions

Step 1

Trim the ends off the green beans and yellow wax beans. Rinse them under cold water and set aside.

Step 2

Bring a large pot of water to a boil. Add a pinch of salt and blanch the beans for 4-5 minutes until just tender but still crisp. Immediately transfer to a bowl of ice water to stop the cooking process. Drain and set aside.

Step 3

In a large skillet over medium heat, cook the bacon slices until crispy. Remove the bacon and place on a paper towel-lined plate to drain. Once cooled, crumble the bacon into small pieces and set aside.

Step 4

Discard most of the bacon grease from the skillet, leaving about 1 tablespoon for added flavor.

In the same skillet, add the olive oil and butter. Once the butter is melted, add the slivered almonds. Toast the almonds for 2-3 minutes, stirring constantly, until golden and fragrant. Remove and set aside.

Return the crumbled bacon and toasted almonds to the skillet. Mix everything together and cook for another minute to combine the flavors.
