Ingredients

  • 500 grams Ground beef
  • 250 grams Ground pork
  • 250 grams Ground lamb
  • 4 pieces Garlic cloves, minced
  • 200 ml Beef stock
  • 1 teaspoon Baking soda
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 2 tablespoons Vegetable oil (for grilling)

Directions

Step 1

Combine the ground beef, pork, and lamb in a large mixing bowl.

Step 2

Add the minced garlic, baking soda, salt, black pepper, coriander, cumin, paprika, and dried thyme. Mix well until the spices are evenly incorporated throughout the meat.

Step 3

Slowly pour the beef stock into the meat mixture, a little at a time, kneading the mixture until it becomes soft, sticky, and well hydrated. This step is key to achieving the signature moist and fluffy texture of mititei.

Step 4

Cover the bowl with plastic wrap and refrigerate the mixture for at least 1 hour, or preferably overnight, to allow the flavors to meld together.

Step 5

After chilling, take the meat mixture out of the refrigerator. With wet hands, shape the meat into small cylindrical rolls, about 3 inches long and 1 inch thick.

Step 6

Preheat your grill or grill pan over medium-high heat and lightly oil the grates with vegetable oil to prevent sticking.

Step 7

Place the mititei on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the rolls are browned and slightly crispy on all sides and cooked through.

Step 8

Serve hot with mustard on the side and fresh bread or a side of your choice. Enjoy your homemade mititei!
