Ingredients

  • 2 pounds Ground beef (80/20 lean-to-fat ratio)
  • 1 cup Breadcrumbs
  • 0.5 cup Whole milk
  • 1 medium Yellow onion (finely diced)
  • 2 large Eggs
  • 0.5 cup Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 2 tablespoons Brown sugar
  • 1 teaspoon Apple cider vinegar

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, diced onion, eggs, 2 tablespoons of ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, garlic powder, and paprika.

Step 3

Mix the ingredients gently with your hands or a spatula until just combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 4

Transfer the meat mixture into the prepared loaf pan or shape it into a loaf on the baking sheet. Press down slightly to create an even surface.

Step 5

In a small bowl, whisk together the remaining ketchup (about 6 tablespoons), brown sugar, and apple cider vinegar to make the glaze.

Step 6

Spread half of the glaze evenly over the top of the meatloaf. Reserve the other half for later.

Step 7

Place the meatloaf in the preheated oven and bake for 45 minutes.

Step 8

After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer.

Step 9

Once fully cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Step 10

Slice and serve warm with your favorite sides such as mashed potatoes, green beans, or a fresh garden salad.
