Ingredients

  • 2 medium yellow squash
  • 1 piece large egg
  • 0.5 cup all-purpose flour
  • 0.25 cup grated Parmesan cheese
  • 2 stalks green onions, thinly sliced
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup vegetable oil (for frying)

Directions

Step 1

Wash and grate the yellow squash using a box grater. Place the grated squash in a clean kitchen towel or cheesecloth, squeeze out as much liquid as possible, and set aside.

Step 2

In a large mixing bowl, beat the egg. Add the grated squash, all-purpose flour, Parmesan cheese, green onions, garlic powder, salt, and black pepper. Mix until well combined and the batter holds together.

Step 3

Heat the vegetable oil in a large skillet over medium heat. It should be hot but not smoking.

Step 4

Scoop about 2 tablespoons of the squash mixture for each fritter, gently flattening them into a patty shape. Carefully place the patties into the hot oil, leaving space between each fritter.

Step 5

Cook for 3-4 minutes on each side, or until golden brown and crispy. Use a spatula to flip them gently.

Step 6

Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.

Step 7

Serve warm, with a dollop of sour cream, a sprinkle of fresh herbs, or your favorite dipping sauce, if desired. Enjoy!
