Ingredients

  • 4 pieces salmon fillets
  • 3 tablespoons white miso paste
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 large (julienned) red bell pepper
  • 1 medium (julienned) carrot
  • 100 grams snap peas
  • 150 grams (sliced) shiitake mushrooms
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon sesame seeds
  • 2 stalks (thinly sliced) green onions
  • 4 cups cooked white rice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a small bowl, whisk together the miso paste, mirin, soy sauce, and sugar to create a marinade.

Step 2

Place the salmon fillets in a shallow dish and brush the marinade generously over them. Cover and refrigerate for at least 15 minutes (or up to 2 hours for deeper flavor).

Step 3

In a large skillet or wok, heat the toasted sesame oil over medium-high heat.

Step 4

Add the julienned red bell pepper, carrot, snap peas, and shiitake mushrooms to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp. Season with salt and black pepper. Remove the vegetables from the pan and set them aside.

Step 5

Wipe the skillet clean and set it over medium heat. Add the marinated salmon fillets skin-side down. Cook for about 4-5 minutes on each side, or until the salmon is cooked to your desired doneness.

Step 6

To serve, divide the cooked white rice among four plates. Top each plate with a portion of stir-fried vegetables and a salmon fillet.

Step 7

Sprinkle sesame seeds and green onions over the dish as garnish. Serve immediately and enjoy your Misae’s Japanese Dance!
