Ingredients

  • 400 grams cherries (pitted, fresh or canned)
  • 100 grams granulated sugar
  • 100 grams all-purpose flour
  • 250 milliliters milk
  • 2 large eggs
  • 50 grams unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a medium-sized baking dish with butter or non-stick spray.

Step 2

If using fresh cherries, wash, pit, and set them aside. If using canned cherries, drain them thoroughly.

Step 3

In a mixing bowl, whisk together the eggs, sugar, and vanilla extract until the mixture is pale and slightly frothy.

Step 4

Gradually add the melted butter and milk to the egg mixture, whisking constantly to combine.

Step 5

In a separate bowl, combine the flour, baking powder, and a pinch of salt. Sift this mixture into the wet ingredients and gently fold until a smooth batter forms.

Step 6

Pour a small amount of the batter into the prepared baking dish to create a thin base layer.

Step 7

Spread the cherries evenly over the base layer, then pour the remaining batter over the cherries, ensuring they are mostly covered.

Step 8

Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 9

Remove the pudding from the oven and let it cool for 10 minutes before serving. Optionally, dust with powdered sugar for a decorative finish.

Step 10

Serve warm or at room temperature, either on its own or with a scoop of vanilla ice cream or a dollop of whipped cream.
