Ingredients

  • 8 pieces chicken thighs (bone-in, skin-on)
  • 1 teaspoons salt
  • 1 teaspoons black pepper
  • 1 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 0.25 cup bourbon
  • 0.33 cup maple syrup (preferably Grade A or B)
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels. Season them evenly on both sides with salt, black pepper, and garlic powder.

Step 3

Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken thighs, skin-side down, and sear for 5-6 minutes until the skin is golden brown and crispy. Flip the chicken and sear the other side for an additional 3 minutes. Remove the chicken from the skillet and set it aside.

Reduce the heat to medium and add the butter to the same skillet. Once melted, pour in the bourbon and stir, scraping up any browned bits from the bottom of the pan. Allow the bourbon to simmer for 1-2 minutes to cook off the alcohol.

Add the maple syrup, chicken broth, apple cider vinegar, and thyme to the skillet. Stir to combine and bring the mixture to a gentle simmer.

Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the chicken. Transfer the skillet to the preheated oven.

Bake for 30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce has slightly thickened.

Carefully remove the skillet from the oven. Spoon more of the sauce over the chicken and let it rest for 5 minutes.

Garnish the chicken with chopped parsley before serving. Serve warm, with the sauce drizzled generously on top.
