Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 2 teaspoons Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried rosemary
  • 3 tablespoons Olive oil
  • 4 medium Russet potatoes
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 cup Greek yogurt
  • 2 cloves Fresh garlic (minced)
  • 2 tablespoons Fresh parsley (chopped)
  • 2 teaspoons Lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the chicken thighs dry with paper towels and place them in a large mixing bowl.

Step 3

In a small bowl, combine paprika, ground cumin, garlic powder, dried rosemary, 1 teaspoon of salt, and 1 tablespoon of olive oil to create a spice rub.

Step 4

Rub the spice mixture generously onto the chicken thighs, ensuring they are evenly coated. Set aside to marinate while you prepare the potatoes.

Step 5

Wash and cut the potatoes into bite-sized chunks. Place them in another mixing bowl, and toss with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and black pepper.

Step 6

Line a large baking sheet with parchment paper. Place the chicken thighs on one side and the seasoned potatoes on the other.

Step 7

Bake in the preheated oven for 40-45 minutes, or until the chicken skin is crispy and the internal temperature reads 165°F (75°C). Flip the potatoes halfway through cooking to ensure even roasting.

Step 8

While the chicken and potatoes are roasting, prepare the creamy garlic yogurt sauce. In a small bowl, mix Greek yogurt, minced garlic, chopped parsley, lemon juice, and a pinch of salt. Stir to combine well and refrigerate until ready to serve.

Step 9

Once the chicken and potatoes are fully cooked, remove them from the oven and let them rest for 5 minutes.

Step 10

Serve the roasted chicken and potatoes with a generous dollop of the garlic yogurt sauce on the side. Garnish with additional parsley if desired.
