  • 1 head Cabbage (optional, for serving)
  • 4 medium Potatoes (optional, for serving)

Directions

Step 1

In a large stockpot, combine 8 cups of water with the sea salt, brown sugar, black peppercorns, mustard seeds, coriander seeds, cloves, bay leaves, garlic, and onion. Stir the mixture until the salt and sugar dissolve to create a brine.

Step 2

Place the ham in the brine, ensuring it is fully submerged. Cover the pot and refrigerate for 24 hours to allow the ham to absorb the flavors. (If the ham floats, use a plate to weigh it down.)
