Ingredients

  • 1.5 cups brown rice
  • 3 cups water
  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 medium bell pepper (diced, any color)
  • 1 medium zucchini (diced)
  • 1 cup mushrooms (sliced)
  • 14.5 ounces canned diced tomatoes (with juices)
  • 1.5 cups shredded cheddar cheese
  • 1 cup cooked chicken or black beans (optional)
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon paprika
  • 0.75 teaspoons salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the brown rice under cold water and combine it with 3 cups of water in a medium saucepan. Bring to a boil, cover, reduce the heat to a simmer, and cook until tender (approximately 30-35 minutes).

Step 3

While the rice cooks, heat the olive oil in a large skillet over medium heat.

Step 4

Add the chopped onion and sauté for 3-4 minutes until softened. Stir in the garlic and cook for another 1 minute until fragrant.

Step 5

Add the diced bell pepper, zucchini, and mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.

Step 6

Stir in the canned diced tomatoes (including their juices), Italian seasoning, paprika, salt, and black pepper. If using cooked chicken or black beans, add them now. Mix well and let simmer for 3-4 minutes.

Step 7

Once the rice is cooked, fluff it with a fork and add it to the skillet with the vegetable mixture. Stir until everything is evenly combined.

Step 8

Lightly grease a 9x13-inch baking dish with olive oil or cooking spray. Transfer the rice and vegetable mixture into the dish, spreading it out evenly.

Step 9

Sprinkle the shredded cheddar cheese in an even layer over the top of the casserole.

Step 10

Bake in the preheated oven for 15 minutes or until the cheese is melted and bubbling.

Step 11

Remove the casserole from the oven and let it cool for 5 minutes. Garnish with freshly chopped parsley before serving.
