Ingredients

  • 1 kg Chicken (bone-in, cut into pieces)
  • 5 tablespoons Oil or ghee
  • 1 tablespoon Garlic paste
  • 1 tablespoon Ginger paste
  • 500 grams Fresh tomatoes (chopped or blended)
  • 3 pieces Green chilies (slit or chopped)
  • 3 tablespoons Yogurt (optional)
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Salt
  • 1 teaspoon Whole cumin seeds
  • 3 tablespoons Fresh coriander leaves (chopped)
  • 2 tablespoons Julienned ginger

Directions

Step 1

Heat the oil or ghee in a karahi (wok) over medium heat.

Step 2

Add the whole cumin seeds and let them sizzle for a few seconds until aromatic.

Step 3

Add the garlic paste and ginger paste, and sauté for 1-2 minutes until fragrant and slightly golden.

Step 4

Stir in the chicken pieces and cook for 5-7 minutes, stirring frequently, until they are lightly seared and no longer pink on the outside.

Add the red chili powder, turmeric powder, coriander powder, and salt. Mix well to coat the chicken with the spices.

Add the chopped or blended tomatoes and cook for 10-12 minutes, stirring occasionally, until the tomatoes break down and form a thick, rich sauce.
