Ingredients

  • 300 grams All-purpose flour
  • 2 large Eggs
  • 50 milliliters Water
  • 1 teaspoon Salt
  • 250 grams Cottage cheese
  • 200 grams Potatoes, boiled and mashed
  • 30 grams Butter, melted
  • 3 tablespoons Fresh mint, finely chopped
  • 2 tablespoons Chives, finely chopped
  • 0.5 teaspoons Nutmeg, freshly grated
  • 0.25 teaspoons Pepper
  • 20 grams Butter, for serving
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, eggs, water, and salt. Knead the mixture into a smooth dough. Cover with a kitchen towel and let it rest for 20 minutes.

Step 2

While the dough rests, prepare the filling by combining cottage cheese, boiled and mashed potatoes, melted butter, fresh mint, chives, grated nutmeg, and pepper in a medium bowl. Mix well until the filling is smooth and evenly distributed.

Once the dough has rested, roll it out on a floured surface until it is very thin (about 2mm thick). Use a round cutter (8-10 cm in diameter) to cut out circles of dough.
