Ingredients

  • 4 medium beets
  • 0.25 cup fresh mint leaves
  • 1 large orange
  • 0.5 cup feta cheese (optional)
  • 3 tablespoons extra virgin olive oil
  • 1.5 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup walnuts (toasted)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash the beets thoroughly and wrap each beet individually in aluminum foil. Place them on a baking sheet and roast in the oven for 40 to 45 minutes, or until they are fork-tender.

Step 3

While the beets are roasting, toast the walnuts in a dry skillet over medium heat for 2 to 3 minutes until fragrant. Set aside to cool.

Step 4

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper to prepare the vinaigrette. Set aside.

Step 5

Once the beets are done, let them cool slightly. Use a paper towel to rub off the skins; they should come off easily. Slice the beets into wedges or rounds as desired.

Step 6

Peel the orange and separate it into segments. Cut each segment in half if they are large.

Step 7

In a large mixing bowl, combine the roasted beets, orange segments, mint leaves, feta cheese (if using), and toasted walnuts.

Step 8

Drizzle the vinaigrette over the salad and toss gently to coat all ingredients evenly.

Step 9

Serve at room temperature or chilled for a refreshing dish.
