Ingredients

  • 2 pieces Prepared pie crusts (top and bottom)
  • 4 cups Fruit of choice (such as apples, berries, peaches, or cherries)
  • 0.75 cups Granulated sugar
  • 3 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 0.25 teaspoons Salt
  • 1 tablespoon Butter
  • 1 piece Egg (for egg wash, optional)
  • 1 tablespoon Water (for egg wash, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

If using fresh fruit, wash, peel, and/or pit as necessary, then cut into bite-sized pieces. If using frozen fruit, ensure it is thawed and drained.

Step 3

In a large mixing bowl, combine the fruit, granulated sugar, cornstarch, lemon juice, and salt. Mix well to coat the fruit evenly.

Step 4

Place one of the pie crusts into a 9-inch pie dish, pressing it gently against the bottom and sides of the dish.

Step 5

Pour the fruit mixture into the crust, spreading it out evenly. Dot the top of the filling with small pieces of butter.

Step 6

Cover the pie with the second crust. You can either leave it whole, cutting slits or a decorative pattern for ventilation, or create a lattice top.

Step 7

Seal the edges of the top and bottom crusts together by pinching or crimping them with a fork.

Step 8

Optional: In a small bowl, whisk together the egg and water to make an egg wash. Brush it lightly over the top crust for a golden finish.

Step 9

Place the pie on a baking sheet to catch any drips, then bake in the preheated oven for 50 minutes, or until the crust is golden brown and the filling is bubbling.

Step 10

Allow the pie to cool for at least 2 hours to let the filling set. Serve warm or at room temperature, optionally with whipped cream or a scoop of vanilla ice cream.
