Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cup Unsalted butter (cold)
  • 4 tablespoons Ice water
  • 1.25 cups Granulated sugar
  • 3 tablespoons Unsweetened cocoa powder
  • 2 tablespoons All-purpose flour
  • 0.25 teaspoons Salt
  • 1.5 cups Whole milk
  • 3 Eggs
  • 1 teaspoon Vanilla extract
  • 4 tablespoons Unsalted butter
  • 1 cup Heavy cream (for whipped topping)
  • 2 tablespoons Powdered sugar
  • 0.5 teaspoons Vanilla extract (for whipped topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

To make the crust, combine 1.5 cups of flour and 0.5 cup cold butter in a large bowl. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse sand.

Step 3

Add 4 tablespoons of ice water, one tablespoon at a time, mixing gently until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 20 minutes.

Step 4

Roll out the chilled dough on a lightly floured surface and transfer it to a 9-inch pie dish. Trim and crimp the edges as desired, then prick the bottom with a fork.

Step 5

Blind bake the crust: Line the crust with parchment paper, fill with pie weights or dried beans, and bake for 15 minutes. Remove the weights and bake for another 5-7 minutes until lightly golden. Let cool.

Step 6

For the filling, combine 1.25 cups sugar, 3 tablespoons cocoa powder, 2 tablespoons flour, and 0.25 teaspoon salt in a medium saucepan.

Step 7

In a separate bowl, whisk together 1.5 cups whole milk, 3 eggs, and 1 teaspoon vanilla extract. Gradually pour this mixture into the dry ingredients while stirring constantly.

Step 8

Cook the mixture over medium heat, whisking continuously, until it thickens (about 8-10 minutes). Once thickened, remove from heat and stir in 4 tablespoons butter until fully melted and incorporated.

Step 9

Pour the chocolate filling into the pre-baked pie crust. Smooth the top with a spatula and let the pie cool to room temperature before transferring it to the refrigerator to set (at least 4 hours or overnight).

Step 10

To make the whipped cream topping, beat 1 cup heavy cream, 2 tablespoons powdered sugar, and 0.5 teaspoon vanilla extract with a hand or stand mixer until soft peaks form.

Step 11

Spread or pipe the whipped cream over the chilled pie just before serving. Optionally, garnish with chocolate shavings or a sprinkle of cocoa powder.
