Ingredients

  • 8 pieces Flour tortillas
  • 2 cups Chicken breasts, cooked and shredded
  • 2 cups Cheddar cheese, shredded
  • 1 cup Sour cream
  • 2 cups Enchilada sauce
  • 1 medium Onion, finely chopped
  • 1 can (4 oz) Green chiles, diced
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the diced green chiles, cumin, garlic powder, salt, and black pepper. Cook for another 2 minutes.

In a mixing bowl, combine the shredded chicken with 1 cup of shredded cheese and the cooked onion-chile mixture. Mix well.

Spread 1/2 cup of enchilada sauce evenly on the bottom of a 9x13-inch baking dish.
