Ingredients

  • 1 pound Ground turkey
  • 1 large Egg
  • 0.5 cup Breadcrumbs
  • 0.5 cup, finely diced Onion
  • 2 minced Garlic cloves
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Smoked paprika
  • 0.75 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Tomato paste
  • 8 large Collard green leaves
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Bring a large pot of water to a boil. Carefully blanch the collard green leaves by submerging them in the boiling water for 30 seconds to 1 minute until they become pliable. Immediately transfer the leaves to a bowl of ice water to stop the cooking process. Pat dry and set aside.

Step 3

In a large mixing bowl, combine the ground turkey, egg, breadcrumbs, onion, garlic, Italian seasoning, smoked paprika, salt, black pepper, and tomato paste. Mix gently until evenly combined, being careful not to overmix.

Divide the turkey mixture into 8 equal portions and shape each portion into a small loaf, about 2-3 inches long.

Place one blanched collard green leaf flat on a work surface. Place a turkey loaf in the center of the leaf, fold the sides over the loaf, and then roll from the bottom to completely enclose the meatloaf, like a parcel. Repeat with the remaining leaves and turkey mixture.

Arrange the wrapped meatloaves seam-side down on the prepared baking sheet. Lightly brush the tops with olive oil to prevent drying during baking.

Bake in the preheated oven for 25-30 minutes, or until the internal temperature of the meatloaves reaches 165°F (74°C).
