Ingredients

  • 1 medium, peeled and diced Sweet potato
  • 150 grams, drained Canned tuna
  • 100 grams, drained Canned corn kernels
  • 6 large Eggs
  • 60 milliliters Milk
  • 60 grams, shredded Cheddar cheese
  • 2 stalks, thinly sliced Green onions
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoon (for greasing the muffin tin) Olive oil

Directions

Step 1

Preheat the oven to 180°C (350°F). Lightly grease a 12-cup muffin tin with olive oil or non-stick cooking spray.

Step 2

Place the diced sweet potato in a microwave-safe bowl, add a splash of water, and cover with a microwave-safe lid or plastic wrap. Microwave on high for 5 minutes or until tender. Drain and set aside to cool slightly.
