Ingredients

  • 12 pieces Baby potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Sour cream
  • 0.5 cup Shredded cheddar cheese
  • 0.25 cup Cooked bacon bits
  • 2 tablespoons Chives (chopped)
  • 0.25 teaspoon Garlic powder

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the baby potatoes thoroughly and pat them dry using a clean towel.

Step 3

Place the potatoes on a baking sheet and drizzle them with olive oil. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Toss to coat evenly.

Bake the potatoes in the preheated oven for 20-25 minutes, or until they are tender when pierced with a fork. Remove from the oven and allow them to cool slightly.

Once cool enough to handle, slice the top off each potato. Using a small spoon or melon baller, carefully scoop out the center of each potato, leaving a thin shell. Transfer the scooped-out potato flesh into a mixing bowl.
