Ingredients

  • 1 lb ground beef or lamb
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 1 cup frozen peas
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 cup beef or chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 3 cups mashed potatoes (prepared in advance)
  • 0.5 cup cheddar cheese, shredded
  • 1 tsp butter (for greasing)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 6-cup muffin tin with butter and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened.

Step 3

Stir in the carrots and cook for another 2-3 minutes, then add the minced garlic and cook for 30 seconds, stirring frequently until fragrant.

Step 4

Add the ground beef or lamb to the skillet and cook until browned, breaking it apart with a spatula. Drain any excess fat if needed.

Step 5

Stir in the tomato paste, broth, Worcestershire sauce, salt, and pepper. Let the mixture simmer for 5-7 minutes until slightly thickened.

Step 6

Turn off the heat and mix in the peas. Set the filling aside to cool slightly.

Step 7

Spoon the meat mixture evenly into the muffin tin cups, filling each about 3/4 of the way full.

Step 8

Top each cup with a generous portion of mashed potatoes, spreading it to cover the filling completely.

Step 9

Sprinkle shredded cheddar cheese on top of the mashed potatoes for an extra layer of flavor.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the tops are golden brown.

Step 11

Remove the mini Shepherd’s Pies from the oven and let them cool for 5 minutes before gently removing them from the muffin tin.

Step 12

Serve warm and enjoy these perfectly portioned comfort food bites!
