Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with olive oil or non-stick cooking spray to prevent sticking.

Step 2

In a medium-sized bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.

Step 3

Stir in the shredded cheddar cheese, pepperoni slices, diced red bell pepper, and chopped green onion. Mix well to distribute the ingredients evenly within the egg mixture.
