Ingredients

  • 8 oz beef tenderloin medallions (mini mignon)
  • 16 oz Velveeta cheese
  • 10 oz diced tomatoes with green chilies (canned)
  • 0.5 onion
  • 2 garlic cloves
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup milk (optional for thinning)

Directions

Step 1

Cut the beef tenderloin medallions into small bite-sized pieces (about 1/2 inch cubes).

Step 2

Mince the garlic and finely dice the onion.

Step 3

In a large skillet, heat olive oil over medium-high heat. Add the beef cubes and season with salt, black pepper, cumin, and paprika. Sear the meat for 2-3 minutes per side until browned, then remove from the skillet and set aside.

Step 4

Reduce the heat to medium and add the butter to the skillet. Once melted, add the diced onion and garlic. Cook for 3-4 minutes, stirring occasionally, until softened and fragrant.

Step 5

Add the canned diced tomatoes with green chilies to the skillet and stir well. Let the mixture simmer for 2-3 minutes.

Step 6

Reduce the heat to low and add the Velveeta cheese, cut into cubes, to the skillet. Stir continuously until the cheese is completely melted and the dip has a smooth consistency.

Step 7

Return the seared beef cubes to the skillet and gently fold them into the cheesy mixture. If the dip is too thick, add milk a little at a time until the desired consistency is reached.

Step 8

Remove the skillet from heat and transfer the dip to a serving bowl.

Step 9

Serve warm with tortilla chips, crackers, or toasted baguette slices. Enjoy!
