Ingredients

  • 20 pieces Oreo cookies
  • 4 tablespoons Unsalted butter
  • 2 cups Vanilla ice cream
  • 1 cup Heavy cream
  • 1 cup Semisweet chocolate chips
  • 2 tablespoons Powdered sugar
  • 6 pieces Mini Oreos (for topping)

Directions

Step 1

1. Place the Oreo cookies (filling included) into a food processor and pulse until finely crushed.

Step 2

2. Melt the butter in the microwave and mix it into the crushed Oreos until the mixture resembles wet sand.

Step 3

3. Divide the Oreo mixture evenly into 6 mini pie tins or a silicone muffin pan. Press down firmly to create a crust, then place in the freezer for 10 minutes to set.

Step 4

4. Soften the vanilla ice cream slightly by letting it sit at room temperature for 5 minutes. Scoop the softened ice cream into each mini crust, smoothing the tops with a spatula. Freeze again for at least 1 hour or until firm.

Step 5

5. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and pour it over the chocolate chips in a heatproof bowl. Let sit for 1 minute, then whisk until smooth to create a ganache.

Step 6

6. Allow the ganache to cool slightly, then spoon or drizzle it over the top of each mini pie. Return to the freezer for another 20 minutes to set.

Step 7

7. Before serving, top each mini pie with a Mini Oreo cookie for garnish. Let the pies sit at room temperature for 2-3 minutes before serving to soften slightly.
