Ingredients

  • 500 grams Ground beef
  • 1 cup Breadcrumbs
  • 1 large Egg
  • 3 tablespoons Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 small Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 3 medium Sweet potatoes
  • 3 tablespoons Olive oil
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt (for sweet potato chips)
  • 0.25 teaspoon Black pepper (for sweet potato chips)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.

Step 2

Peel and slice the sweet potatoes into thin rounds, about 1/8-inch thick, ensuring they are even for consistent cooking.

Step 3

In a large bowl, toss the sweet potato slices with olive oil, smoked paprika, garlic powder, salt, and black pepper until well coated. Spread them out in a single layer on one of the prepared baking sheets.

Step 4

Bake the sweet potato chips for 15 minutes on one side. Flip the slices and bake for another 10-15 minutes, or until crispy and golden brown. Keep an eye on them to avoid burning.

Step 5

While the sweet potatoes bake, prepare the mini meatloaves. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, ketchup, Worcestershire sauce, finely diced onion, minced garlic, salt, black pepper, and paprika. Mix gently with your hands until just combined, being careful not to overmix.

Step 6

Divide the meat mixture into 4 equal portions and shape each into an individual loaf, placing them onto the second prepared baking sheet.

Step 7

Brush the tops of the mini meatloaves with a little extra ketchup for a glossy finish if desired.

Step 8

Bake the mini meatloaves in the oven alongside the sweet potatoes during the second half of their baking time, for about 20-25 minutes, or until the meatloaves reach an internal temperature of 160°F (71°C).

Step 9

Once baked, remove both the mini meatloaves and the sweet potato chips from the oven. Let the meatloaves rest for 5 minutes before serving.

Step 10

Plate the mini meatloaves alongside the baked sweet potato chips, and enjoy a wholesome and satisfying meal.
