Ingredients

  • 4 ounces Ground beef (80% lean)
  • 2 tablespoons Breadcrumbs
  • 1 tablespoon Milk
  • 1 small Egg
  • 2.5 tablespoons Ketchup
  • 0.5 teaspoons Yellow mustard
  • 0.5 teaspoons Worcestershire sauce
  • 0.25 teaspoons Onion powder
  • 0.25 teaspoons Garlic powder
  • 0.25 teaspoons Salt
  • 0.125 teaspoons Ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and prepare a small baking dish or line a baking tray with parchment paper.

Step 2

In a medium mixing bowl, combine the ground beef, breadcrumbs, milk, egg, 1 tablespoon of ketchup, Worcestershire sauce, onion powder, garlic powder, salt, and ground black pepper.

Step 3

Mix the ingredients gently with your hands or a fork until evenly combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 4

Shape the mixture into a small loaf, about 4 inches long and 2 inches wide, and place it in the prepared baking dish or on the parchment-lined tray.

Step 5

In a small bowl, combine the remaining 1.5 tablespoons of ketchup with the yellow mustard, mixing well to create a glaze.

Step 6

Spread the glaze evenly over the top of the mini meatloaf.

Step 7

Bake the meatloaf in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (70°C) as measured with a meat thermometer.

Step 8

Remove the meatloaf from the oven and let it rest for 5 minutes before serving.

Step 9

Serve warm with your favorite sides, such as mashed potatoes or roasted vegetables. Enjoy!
